Project Size: 5 locations, 2500 square feet at each location 

Project Duration: 10-12 week projects

Role: Construction Manager

Work Performed:

• Created RFP to general contractor and specialty subs/vendors

• Contract management

• Peer review of drawings, field visits, field directives

• Review RFIs, review change order requests, review invoices

• Punch list walks 

Fun Facts: 

1. SkinnyFats concept is based upon individual indulgences - do you want to be good and eat healthy today or do you want to be bad and eat happy today? - The menu board is organized “Happy Side” and “Healthy Side.” I have had both, and I think I like the Healthy side recipes better. 

2. An artist paints a different mural for each SkinnyFats location, bringing another element of warmth to each store. All murals are painted on recycled old barn wood finished walls.
